Vineyard: Single vineyard Laoudia, terraced on the south-western slopes of Pyrgos.
Soil: Sandy, porous soils, rich in pumice and volcanic ash.
Plant Age and Configuration: Own centuries-old deep-rooted vineyards, planted on terraces. The vines are trained in the form of low spiral baskets.
Harvest Dates: Mid-August.

Barrels: Amphorae
Winemaking: After harvest, the ripened grapes are placed in refrigerated chambers. The grapes are pressed whole in a basket press, followed by static debourbarage. Alcoholic fermentation takes place in amphorae using selected yeast strains, at 16-17°C. The wine ages on its fine lees inside the amphorae for about 4 months, followed by bottling and maturation for at least another 10 months.
Tasting Notes: A wine that reflects the most typical characteristics of the Santorini variety and terroir. It presents a multifaceted nose with aromas of ripe citrus fruits, sweet notes of sugar, flowers and herbal dew. The flint is always present, giving it a distinctive and unique character. The palate is balanced, with an excellent structure and a persistent finish, with a touch of iodine. A wine to age, lively and well-structured, with a long body and an intense aftertaste.
