Retsina is a type of wine protected by Greek and European legislation as “Appellation by Tradition”. The name retsina is used exclusively for dry Greek wines, white or rosé, produced with the traditional method of adding pine resin to the must. In fact, the law defines the limits within which the quantities of resin must be maintained, the method with which it is added to the must, as well as the type of resin, which must derive exclusively from the pine tree Pinus Halepensis, popularly known as the Aleppo pine.
