Vineyard and Region

Vineyard: Centuries-old vineyard, planted on terraces and traditionally shaped like a basket on the southwestern slopes of Pyrgos, Santorini.
Soil: Sandy and porous soils, rich in pumice and volcanic ash, creating a unique and distinct terroir.
Irrigation: Non-irrigated, favoring the purity and intensity of the grapes.
Vineyard Age: Own vineyards over 100 years old, cultivated on terraces.
Yield: 1.5 t/ha
Production: 5,000 bottles

Winemaking

Process: Harvesting of grapes at the maximum point of natural ripeness and immediate start of winemaking on the same night, following the traditional "nykteri" technique.

Fermentation: The whole grapes are pressed in a vertical press, and the alcoholic fermentation takes place in large French oak barrels at a controlled temperature between 16-17°C.

Aging: The wine matures on its fine lees for 8 months and, after bottling, continues to mature for at least another 6 months before being released for consumption.

Tasting Notes

Aroma: Wine of great intensity and aromatic complexity, with layers of ripe citrus fruits, caramelized and stone fruits, honeycomb, toasted nuts and hints of vanilla.

Palate: Lush, rich and ripe on the palate, with a velvety texture and a long, lingering finish.

Pairing: This wine has a complexity that makes it ideal for elaborate gastronomic dishes, with great aging potential.
Character: An authentic wine, reflecting the rich tradition of the Assyrtiko variety and the unique terroir of Santorini.
