Winemaking: The grapes are stored in cold storage chambers. Using a pneumatic press, the grapes are pressed whole and grouped. Alcoholic fermentation takes place in stainless steel tanks at 16-17°C, using selected yeast strains. The wine ages on its fine lees for about 3 months before bottling.
Tasting Notes: An authentic wine with a rich character, with the distinctive personality of the Assyrtiko variety. It has a bright golden colour with discreet aromas of citrus and mineral notes, with a touch of iodine that intensifies with ageing. The palate is lively, well-structured, with a long body and an intense and persistent aftertaste.
