Winemaking:
The harvest was carried out manually to ensure that the grapes reached the appropriate maturity. Skin maceration was carried out at 12°C for sixteen hours, allowing a delicate extraction of aromas and flavors. Fermentation took place in stainless steel vats, with a slow fermentation rate, lasting more than fifteen days, resulting in a wine of unique complexity.
Tasting Notes:
Lyrarakis Assyrtiko Voila displays a bright yellow colour and floral aromas with delicate notes of ginger and ripe citrus fruits. On the palate, the intensely ripe grapes give the wine a rich, toasty and mineral sensation, with a balanced acidity that enhances the freshness.
Harmonization:
This wine is ideal to accompany seafood, grilled fish and white meats cooked with lemon, providing a perfect combination of freshness and richness of flavors.
