The combination of selected vineyards, ranging in age from 30 to 50 years, together with the very low yield and the specific coastal conditions of the region, contributes to the quality and typicity of the Savvatiano grown in this area.
Winemaking:
The current vintage is blended with previous vintages, matured in acacia barrels. Cold pre-fermentation maceration takes place on crushed grapes, followed by light pressing. The must is inoculated with a selected Saccharomyces strain and fermented at 15° - 17°C in stainless steel tanks. The young wine remains in contact with its light lees for a few weeks to increase its complexity.
Tasting Notes:
Light greenish-yellow color. Fine aromas of white-fleshed fruits, with citrus notes and soft herbal touches. On the palate, the wine presents a well-balanced acidity with a pleasant structure, finishing with a pleasant aftertaste.
Harmonization:
Excellent to accompany typical Mediterranean dishes, fish, seafood pasta, white meat, grilled vegetables, salads, cheeses and cold cuts with mild flavors.
