Vineyard and Region
- Location: Centuries-old vineyards over 50 years old, located in the famous areas of Megalochori, Akrotiri and Pyrgos, in Santorini.
- Soil: Of volcanic origin, with excellent drainage. The soil is rich in volcanic ash, pumice and traces of lava, providing a unique terroir that gives the wine an unmistakable minerality.
- Climate: Mediterranean, with hot, dry summers and mild winters. The August winds play a key role, moderating the high temperatures and protecting the vines from disease.
Harvest and Winemaking Process
- Harvest: Carried out manually in small collection boxes to preserve the integrity of the grapes. Harvesting takes place between the end of August and the beginning of September, when the grapes reach the ideal point of ripeness.
- Winemaking Method: The must ferments in stainless steel tanks at a controlled temperature, preserving the fresh and fruity aromas. Fermentation is followed by maturation of at least 5 months on fine lees, which gives the wine complexity and texture.
Sensory Characteristics
- Appearance: It has a pale yellow color with greenish reflections, attractive and vibrant.
- Aromas: It exudes a combination of citrus aromas, such as lemon and grapefruit, accompanied by notes of pear, peach and a saline touch, typical of Santorini, with the characteristic minerality of the island.
- Palate: Full-bodied and balanced, with a striking acidity that provides freshness. The finish is long and persistent, with the presence of intense flavors of lemon, grapefruit and mineral nuances.
Ideal Harmonization
This Assyrtiko pairs perfectly with fish, shellfish, seafood and white meat dishes. Its acidity and freshness also make it an excellent accompaniment to grilled dishes and fresh salads.
Aging Potential
This wine has great aging potential and can be stored for more than 6 years, with an evolution that will further intensify its characteristics.
Production
Annual production is limited to 40,000 bottles, which guarantees exclusivity and quality in each bottle.
