Viticulture
Vinsanto production begins at the end of August, when the grapes reach the ideal degree of ripeness (14-15° Be). The vineyards are located mainly in the south of Santorini, a region marked by volcanic and sandy soils, which give the wine its unique minerality.
The vines, grown in the traditional "kouloura" basket shape, provide protection from the island's strong winds and the intense Aegean sun.
Over 200 years old , these vines are not irrigated, resulting in grapes with an intense and concentrated flavor.
Winemaking
After harvesting, the grapes are dried in the sun for 10 to 15 days , an essential process to concentrate the sugars and aromas. The extracted juice ferments naturally in 80-year-old Russian oak barrels , where it ages for 6 years , acquiring complexity and depth.
With an aging potential of over 30 years , Vinsanto is a true wine treasure.
Tasting Notes
It has an intense and sophisticated aroma, bringing notes of raisins, dried figs, ripe plums, caramel and dark chocolate , with subtle hints of coffee and spices.
In the mouth, it has a concentrated body and vibrant acidity , perfectly balancing its natural sweetness. The finish is long and striking , revealing all the richness of this exceptional wine.
